Íris Erlingsdóttir is an Icelandic journalist and writer. Her professional background includes work in radio and television news as a reporter and news anchor for Channel 2 in Iceland. She was editor-in-chief of Icelandic gourmet food magazine Gestgjafinn (The Host) and author/editor of the magazine's cookbooks. Íris studied business administration at the Commercial College of Iceland and law at the University of Iceland, has a BA in journalism and history from California State University and holds a MA in Traditional Oriental Medicine. Iris has written numerous features and columns on politics and law, as well as cooking, food, and health for Icelandic and American media. she holds a MA in Traditional Oriental Medicine. Ms. Erlingsdottir became an advocate for pain patients’ rights to health and to protection against cruel, inhuman, and degrading treatment after being denied continued opioid pain medication treatment for a rare, untreatable arthritic condition that causes severe pain and progressive destruction of the joints. She lives in Northfield, Minnesota.
